A wall oven is a simple machine wrapped in a complicated control system, and a steam oven is a plumbing appliance that happens to get hot. Those two sentences cover most of what goes wrong.
Temperature complaints are sensor complaints
“It runs hot” and “it runs cold” almost always come back to the temperature sensor, not the elements. The sensor is a resistance probe: at a known temperature it should read a known resistance, and a probe that has drifted a few percent will hold the cavity ten or fifteen degrees off all day without ever failing outright. We measure it cold, then measure the cavity with an independent probe through a full recovery cycle, because an oven that recovers slowly and an oven that settles at the wrong temperature are different faults with different parts.
Uneven browning front to back is a different animal again — that is convection airflow, a fan motor losing speed, or a rear baffle that has been reinstalled with a gap. It is worth checking before anyone spends money on control boards.
Self-clean is the single most destructive cycle in the kitchen
The most common way a Thermador wall oven dies is that someone ran a self-clean cycle and the oven never came back. Pyrolytic cleaning takes the cavity far above any normal cooking temperature, and everything around that cavity — the door latch motor, the thermal cut-outs, the wiring in the top of the cabinet, the control board sitting directly above the heat — is being asked to survive several hours at the limit of its design.
When an oven is dead after a self-clean, the sequence is: check the thermal cut-out first, then the latch mechanism, then the board. A thermal fuse is an inexpensive part, and replacing it without finding out why it opened just means doing the job twice. Frequently the answer is that the cooling fan or its duct is obstructed, or that the oven is installed in a cabinet without the clearances the installation instructions call for.
If you have a self-clean oven you rely on, the honest advice is to run the cycle when the appliance is young rather than saving it for a decade and then asking a fifteen-year-old oven to survive it.
Steam ovens are a water appliance
Thermador’s steam and steam-convection ovens carry a fill reservoir or a plumbed supply, a boiler or steam generator, a drain path and a set of level sensors. The failures follow the water: a fill valve that will not open, a level sensor coated enough to misreport, a drain that has partially blocked, or a door seal that has hardened and now lets steam into the cabinet.
When a steam oven stops making steam, the diagnosis follows the water path in order, and each step rules out the one after it. Does the fill valve open and does water actually leave the reservoir or the plumbed supply. Does it reach the generator, and is the generator drawing the current it should while it heats. Does the level sensing report a true level, or has it been fooled into reporting full or empty. Is the drain path clear, or is the cavity holding water at the end of a cycle. Is the door seal still holding steam inside the cavity rather than venting it into the surrounding cabinet, where it will find the control board.
Valves, sensing and seals account for most of what we find. Running that sequence takes a fraction of the time that guessing costs, and it is the difference between replacing the part that failed and replacing the part that was easiest to reach.
Speed ovens and warming drawers
A combination speed oven adds a microwave system to the same cavity, which adds a magnetron, a high-voltage supply and an interlock chain. Interlocks are the usual suspect when a speed oven runs the convection side but not the microwave side — three switches in series, and one that has gone lazy takes the whole function out while everything else looks normal.
Warming drawers are the simplest thing in the stack: an element, a thermostat or sensor, and a control. When one fails it is almost always the element or the drawer’s own switch, and it is one of the few repairs where the part is inexpensive enough that the diagnostic fee is the larger number.
